Avocado Tacos

Equipment: Cutting board, sharp knife, measuring cups and spoons, immersion blender or blender, cheese grater, optional foil lined sheet tray
Ingredients:
3-4 medium tortillas
2 avocados
1-2 bell peppers
1 bunch of cilantro
½ tsp onion powder
1 garlic clove
½ cup cheese
½ - ¾ cup refried beans
1/3 cup olive oil
¼ cup vinegar
½ tsp salt
¼ tsp pepper
½ tsp ground cumin
½ tsp ground coriander

Directions:
In a blender or with an immersion blender, combine 1 bunch of cilantro, ½ tsp of salt, ground cumin, ground coriander, 1 garlic clove, ¼ cup vinegar, and ⅓ cup olive oil and blend until smooth to make a chimichurri sauce.
Dice 1-2 bell peppers and slice 2 avocados and grate ½ cup cheese
In a medium pan placed on medium high heat, pour in 1 tsp of oil and toss in diced bell peppers. Saute for 5-7 minutes. Sprinkle with a pinch of salt and pepper and ½ tsp onion powder.
Lay out tortillas and spread ½ cup of refried beans over the tortillas. Top the beans with grated cheese and then once the peppers are sauted pour those over the cheese. Top that with the slices of avocado and fold the other half over the top.
Either in the same pan, heat the tacos until the cheese has melted, or place on a foil lined sheet tray and place in a 350 degree oven for about 8 minutes.
Serve topped with your chimichurri sauce and enjoy!
