"Chicken" and Asparagus

Equipment: Cutting board, knife, medium sized pan, small pot, mixing bowl, measuring cups and spoons, spatula

Ingredients:

  • 2 cups of a plant based chicken substitute

  • 1 bunch of asparagus

  • ½ cup of cooked rice

  • 2 tsp oil

  • 1 tsp salt

  • ½ tsp pepper

  • ¼ cup of our soy and ginger sauce (see previous recipes)

Directions:

  • Cut base/bottoms of asparagus off

  • Make rice if needed (see previous recipes for our method)

  • Place a pan over medium heat and drizzle in 1 tsp oil and toss in asparagus

  • Cook for five minutes then move to rest

  • Toss in chicken and cook for 5 minutes then pour in ¼ cup sauce and cook for 2 more minutes and move to rest

  • Pour in rice and 1 tsp more oil and toss around to heat up. Toss in ¼ of the “chicken” and stir to combine. Pour in ¼ cup sauce. Stir again and then plate with asparagus and “chicken”.
