Easy Vegan Fish and Chips
With a tartar style sauce

Equipment: Cutting board, knife, sheet tray, foil, mixing bowl, measuring cups and spoons, small pot, heavy fork or masher
Ingredients:
6 vegan fish fillets (these are from Garden)
Your desired amount of your favorite freezer fries
1 cup vegan sour cream (regular sour cream is fine too)
1 lemon
1-3 tbsp Milk
1 tbsp Pickled onions or capers
½ tsp Red pepper flakes
½ tsp Garlic powder
½ tsp Onion powder
¼ tsp Dried dill
2 ½ tsp Salt
1 tsp Pepper
1 tsp Oil

Directions:
Preheat your oven to 425F
Line a sheet tray or two with foil and lay out your vegan fish and fries.
Drizzle everything with a little olive oil and sprinkle over 1-2 tsp salt and 1 tsp pepper. Toss everything around to make sure they are evenly coated and place in the oven. No matter what, we have always found that items like these need to be cooked longer than instructed as they are never browned/crispy when cooked only the recommended ~12 minutes.
In a small mixing bowl combine 1 cup of sour cream, 1-3 tsp milk, ½ tsp red pepper flakes, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp dried dill, and stir to combine.
Chop, fine, the pickled onion (capers work very well here too) and toss in with the sauce. Sprinkle in ½ tsp salt and ¼- ½ tsp black pepper. Stir to combine and taste for any additional seasoning.
Place a small pot over medium heat and fill with water. Bring the water to a boil and pour in 1 cup of frozen peas. Boil for 5 minutes and drain.
Place peas back in the pot and place the pot back on the burner. Sprinkle in ½ tsp salt and a pinch of pepper. Toss in ½ - 1 tbsp butter and mash the peas until smooth. Taste for seasoning and keep warm until everything is done.
Once the “fish” and chips are crispy, pull from the oven and plate up with a heaping helping of mashed peas and a nice spoonful of your tartar sauce.
