Welcome To A New Week!
Hey everyone, this week's meals are as follows. We are going to make Katsu Curry, “Beef” Nachos, Carbonara, Spinach Enchiladas, and Crock Pot Chili. Below are the ingredients and a little write up about shopping and things to look out for!
Groceries
Fresh and Produce:
½ head cauliflower
1-2 sweet potatoes
3-5 carrots
3 yellow onions
5-6 green onion
5-6 garlic cloves
1 1in knob ginger
3 bell peppers
10-12 cherry tomatoes
2 chilis
1 bunch cilantro
1-2 limes
Aisle of Spices, Dried Good, Oils, etc:
1 cup rice
1 large piece kombu
1 cup bonito flakes
2 tbsp flour
1 tbsp soy sauce
1 tsp toasted sesame oil
2 tbsp mirin
1 bag of thick cut tortilla chips
8-10oz pasta
3 cups spinach
1 small can of adobo chili and sauce
1 8-10oz jar of enchilada sauce
1 each of dried pasilla, ancho, and guajillo chili
2-3 cups beef stock
Freezer/Cold:
2 “pork” cutlets
1 cup “beef” crumbles
2-3 tbsp brown miso
½-1 cup sour cream
4 cups, combined, of mozzarella and jack cheese
1 cup parmigiana or pecorino Romano cheese
8-10 flour tortilla
2-4 tbsp butter
Protein:
5 eggs
4 oz cubed pancetta or guanciale
2lb ground beef
Staples (You should always have these):
Cumin
Salt
Pepper
oil
garlic powder
onion powder
Optional:
2-4 chili de arbol
1-2 radish
Notes On Shopping
As always, these shopping items only cover what we will be using in the recipes. These recipes are also written for 2 large or 3 medium servings so you may need to pick up more items, but all the recipes are scalable.
For the “pork” and the “beef” you are certainly welcome to substitute in real beef and real pork, but the cook times will vary. Also, both of these dishes are a great way to introduce yourself to some meat alternatives which are a great way to cut out some extra calories and fat.
If you cannot find the dried chilies at your local store, there are tons of online sellers that sell very fresh dried chilies. They typically come in bags of like 15, don’t worry about them going bad. You’ll want to use them sooner than later just to retain the most flavor, but they will last a long time in your pantry.
Make sure to check your spices, oils, salts, and flour levels before heading to the shop.
