Welcome To A New Week!

Hey everyone, this week's meals are as follows. We are going to make Cocktail Shrimp, Baked Chicken and Rotini, Eggs and Asparagus with a Garlic Chili Oil, Turmeric Cauliflower with Tahini Yogurt, and Ginger Pork Belly with Fennel Puree. Below are the ingredients and a little write up about shopping and things to look out for!

Groceries

Fresh and Produce:

  • 4 celery stalks

  • 2-3 shallots

  • 2 small heads broccoli

  • 2 fennel bulbs

  • 1 head cauliflower

  • 5-6 green onion

  • 2 lemons

  • 10-12 asparagus spears

  • 1 Fresno or Thai chili

  • 1 small piece ginger

  • 5 cloves garlic

  • 3 carrots

  • 2 bay leaves

  • 1 small or 1 half large yellow onion

  • 1 small or ½ large bell pepper

  • 1 orange

  • 2 cups leafy greens

Aisle of Spices, Dried Good, Oils, etc:

  • 1 tbsp champagne vinegar

  • 1-2 cups stock (beef or chicken)

  • 2-3 tbsp turmeric

  • ½ cup pitted olives

  • ¼ cup capers

  • ¼ - ½ cup tahini

  • ¼ cup pistachios

  • 1 28oz can crushed tomatoes

  • 1 15oz diced, fire roasted, tomatoes

  • 2 tbsp tomato paste

  • 10-12oz rotini pasta

  • 1 tsp dried basil

  • 1 tsp dried marjoram

  • 1-2 tsp Calabrian chili

  • 3 tbsp of ketchup or duck sauce

  • 1 tsp dijon mustard

  • 1 tbsp balsamic vinegar

Freezer/Cold:

  • 1-3 tbsp cream

  • ½ cup sour cream or plain Greek yogurt

  • 1-3 tsp prepared horseradish

Protein:

  • 1 ½ lb pork belly

  • 2 eggs

  • 2 chicken breast

  • 15-20 large, shell on, uncooked, shrimp

Staples (You should always have these):

  • Salt

  • Pepper

  • Olive oil

  • Grapeseed or other high smoke point oil

  • Garlic powder

  • Onion powder

  • Ground ginger

  • Dried oregano

  • Dried Thyme

  • Red pepper flakes

Optional:

  • Parsley

  • 1 avocado

  • ½ cup kimchi

  • sesame seeds

  • Cheese for topping like Parmigiano, Pecorino, or mozzarella

Notes On Shopping

As always, these shopping items only cover what we will be using in the recipes. These recipes are also written for 2 large or 3 medium servings so you may need to pick up more items, but all the recipes are scalable

For the pork belly, this dish is a 2 day recipe with the pork belly cooking 7 hours and then resting at least overnight. We will also only be using half it this week and next week the other half will be used for Ramen.

For the shrimp, make sure to get the biggest shrimp they have with the shells still on and uncooked. If you cannot find the shrimp deveined, but shells still on that is ok, but you will need to devein them before cooking. Just make sure to leave the shells on. Most large stores nowadays carry uncooked, deveined, but shells still on shrimp though.

Make sure to check your spices and oils as you may not need some of these things.
