Miso Glazed Pork Loin

Total time: 25-35 minutes

Equipment: 2 cutting boards, 2 knives, measuring cups and spoons, cast iron pan, tons, spatula.

Ingredients:

  • 1lb pork loin

  • ½ head cauliflower

  • 1 small or ½ large bell pepper

  • 4 green onion

  • ⅓ cup light brown miso

  • 3 tbsp soy sauce

  • 3 tbsp honey

  • 1 tsp oil

  • 1 tsp ground ginger, garlic and salt

  • ½ tsp black pepper

Directions:

  • Preheat oven to 450F

  • Using a sharp knife, cut diagonal slices about ½ inch into each side of the pork loin; going in both directions. Little diamond shapes will be made

  • Chop ½ head of cauliflower, 1 bell pepper, and the whites of 4 green onions into large bite size pieces. Slice the green tips of the 4 green onions for garnish.

  • Heat a medium size cast iron pan over medium high heat and drizzle in 1 tbsp of oil. Once hot, place pork loin in pan and sear for 2 minutes on each side. Once all sides have been seared move the pork to a sheet tray lined with foil - or leave the pork in the pan and place the whole pan into the oven and roast for 10 minutes.

  • Place cast iron back on burner over medium heat and toss in your chopped veg. Sauté for 7-10 minutes.

  • In a small mixing bowl, combine 3 tbsp soy sauce, 3 tbsp honey, 1 tsp each of ground ginger, garlic powder, and salt, and ½ tsp of black pepper.

  • After 10 minutes, pull the pork from the oven and pour over 1 half of the glaze, make sure to coat all sides and to get the glaze down into cuts you have made. Roast for another 3-6 minutes.

  • Once the pork is done, or has reached at least 150F internal temp, pull from the oven and let rest for at least 5 minutes.

  • Toss in the rest of your glaze to the sautéed veggies and cook for another 1-2 minutes or until everything is coated and slightly sticky.

  • Plate the veg and top with slices of the pork loin. Garnish with the green onion tips and enjoy.
