"Teriyaki" Turkey Burger

Equipment: Measuring cups and spoons, mixing bowls, heavy bottomed pan, paper towels.
Ingredients:
½- ¾ lb ground turkey
1 tsp cornstarch
2 tbsp water
2 tbsp sugar
½ tsp garlic powder
½ tsp ground ginger
½ tsp onion powder
3 tsp salt
Black pepper
⅓ cup soy sauce
⅓ cup rice vinegar
⅓ cup Worcestershire
Mayo
2 Burger buns
½ cup lettuce
cheese

Directions:
In a small mixing bowl combine 1/3 cup Worcestershire sauce, 1/3 cup rice vinegar, 1/3 cup soy sauce, ½ tsp garlic powder, ½ tsp ground ginger, ½ tsp onion powder, and 2 tbsp sugar.
Using a microwave or a small pot, bring sauce mixture to a boil. Boil for 2 minutes.
In a small bowl combine 2 tbsp water and 1 tsp cornstarch. Stir to combine. Once mixture is ready and sauce is to a boil, pour starch water into sauce and boil for at least 2 minutes. Sauce should thicken slightly. Set sauce aside.
Form turkey burger patties with ½ lb. ground turkey. If you want larger patties or are making more than 2 you can use ¾ of a pound. Once patties are formed, if your patties are moist on the surface place them on some paper towels to dry off. You do not want wet burgers as a quality sear will not form. Sprinkle 1-2 tsp salt over patties and ½ tsp black pepper.
Place a heavy bottomed pan or cast iron over medium to medium high heat and drizzle in 1-2 tsp oil. Once oil is hot, place burger patties in pan and cook for 5-6.
After 5-6 minutes flip the burgers and cook for 2 minutes. At this point top the burgers with cheese if you would like cheese. We recommend not going with cheddar or a similar cheese. Go with something a little less sharp or in the jack family. After 2 minutes pour in your teriyaki style sauce and cook the burgers in the sauce for 3-4 more minutes.
While that is happening toast the inside portion of your buns and then layer with a thin layer of mayo.
Once patties are done move them or the whole pan to under the broiler to finish melting the cheese, should take about 30 seconds.
Top your toasted buns with burgers and a drizzle of the teriyaki style sauce. Top that with some lettuce and enjoy!
