Turkey Shepherd's Pie

Equipment: Cutting board, knife, measuring cups and spoons, large pan, grater, small cake rounds or a medium size casserole or baking dish, spatula

Ingredients:

  • 1lb ground turkey

  • 1 cup peas

  • 1-2 celery stalks

  • 1 small onion

  • 1 large carrot

  • ¼ cup Parmigiano

  • 2 potatoes

  • 2 cloves garlic

  • 3 tbsp cream or milk

  • 2-3 tbsp butter

  • 1 tbsp flour

  • 1 tbsp oil

  • Salt

  • Pepper

  • ½ cup beef stock

  • Optional 1 tbsp Worcestershire sauce

Directions:

  • Dice 2 potatoes, 1 small onion, 2 stalks of celery, and 2 cloves of garlic. Using a box grater or hand grater, grate 1 large carrot.

  • Place a pan over medium heat and drizzle in 1 tbsp of oil or butter. Once hot toss in dice onion and celery and sauté for 3-5 minutes, stirring occasionally. After 3-5 minutes toss in grated carrot and cook for another 5 minutes. After 5 minutes toss in the 2 cloves of minced garlic and 1 cup of frozen peas. Cook for an additional 3-5 minutes, stirring occasionally. Toss in 1-2 tsp salt and ½ tsp pepper. Stir to combine, move veggies to a bowl, and set aside.

  • Place pan back over medium heat and drizzle in 1-2 tbsp oil. Once hot, place 1lb ground turkey in the pan and cook. Crumble the turkey with a spatula and break into bite sized chunks. Cook for 5-8 minutes stirring and crumbling a couple times along the way.

  • Once turkey is cooked, toss the veggies into the pan and 1 tbsp of flour. Stir to coat everything and cook for 2 minutes. After 2 minutes pour in ½ cup beef stock and optional 1 tbsp of Worcestershire sauce. Bring to a boil and boil for 3-4 minutes. Once the mixture has thickened and everything looks happy, set it aside.

  • Preheat oven to 375F

  • Place a pan or pot over medium high heat and fill with water. Sprinkle in 1 tbsp of salt and bring to a boil. Once at a boil, toss in the 2 diced potatoes and cook until soft. Cook times will vary but start checking after 10 minutes. Use a fork or a small knife, either of them should easily go through the potatoes.

  • Once the potatoes are fully cooked, drain them well and move to a mixing bowl or back to the pot you were using.

  • Using a potato masher or a heavy fork, mash the potatoes. Pour in 3 tbsp of cream or milk and 2 tbsp butter. Mash the potatoes the rest of the way to your desired consistency. Taste for salt and pepper. Grate in a couple of tbsp of parmigiana cheese. Stir to combine.

  • Fill your small cake rounds or baking dish with the meat mixture and then top that with the mashed potatoes. Make sure to cover every spot with the potatoes. Once everything is covered use a fork to create nooks and crannies in the surface of the potatoes. These spots will brown and create texture while baking.

  • Place dish(es) in the oven and bake for 25 minutes.

  • Once well browned, pull from the oven and top with a little more grated Parmigiano. Let sit for 5 minutes and then serve.
