Welcome To A New Week!

Hey everyone, this week's meals are as follows. We are going to make avocado tacos, lamb vindaloo, chicken queso, Korean tofu tacos, and topped toasties. Below are the ingredients and a little write up about shopping and things to look out for!

Groceries

Fresh and Produce:

  • 3 avocados

  • 2 radishes

  • 8 green onions

  • 1 lemon

  • High quality bread (fresh baked)

  • 1 Asian pear

  • 2-3 bell pepper

  • 2 red onion

  • 1 large bunch of cilantro

  • 1 lime

  • 8 garlic cloves garlic cloves

Aisle of Spices, Dried Good, Oils, etc:

  • 1 can of high quality tuna

  • 1 tsp toasted sesame oil

  • 1 tbsp gojuchang

  • 2 tbsp mayo

  • 1-2 tbsp sesame seeds

  • 1 tbsp cornstarch

  • 1 12oz can evaporated milk

  • ½ cup refried beans

  • 1 cup rice

  • 1 28oz can crushed tomatoes

  • 2 tbsp dijon mustard

  • ¼ cup vinegar

  • 1 tbsp garam masala

  • 4 dried chilies

  • 3 cardamom pods

  • 3 bay leaves

Freezer/Cold:

  • 1 cup ricotta cheese

  • 1 bag of edamame

  • ½ cup kimchi

  • 6-8 medium flour tortillas

  • 2 cups mozzarella cheese

  • 1 cup jack style cheese

  • 1 cup plain yogurt

Protein:

  • 1 package of firm tofu

  • 2 chicken breasts, precooked is fine

  • 1-1 ½lb lamb

Staples (You should always have these):

  • Salt

  • Pepper

  • Olive oil

  • Garlic powder

  • Onion powder

  • Cumin

  • Coriander

  • Ground ginger

  • Chili powder

  • Paprika

Optional:

  • 1 bunch of parsley

  • 1 tbsp cream

  • 1 spicey chili

Notes On Shopping

As always, these shopping items only cover what we will be using in the recipes. These recipes are also written for 2 large or 3 servings so you may need to pick up more items, but all the recipes are scalable.

For the lamb vindaloo, if you want to substitute lamb for pork or beef you are welcome to do so. The flavor will not be the same, but either meat option does work.

For the tuna, this is not going to be made into a tuna salad style thing so you are really going to taste the tuna. For the best results buy the best tuna you can. Typically the stuff that claims it is wild caught or pole caught is better tasting than the starkist stuff

For the bread, try to get something made at a local bakery or at least something made fresh and not in a prepackaged thing that has sat on a shelf for weeks already.

For the chicken queso, rotisserie chicken works great, but also pretty much any precooked, non canned, chicken works well.
