Sausage with Cheesy Mashed Potatoes

Equipment: Cutting board, sharp knife, mixing bowl, sheet tray, tin foil, small to medium pot, box grater, spatula, potato masher or heavy fork
Ingredients:
2 German style sausages
2 russet potatoes
1 - 2 cups arugula
2 green onions
1-2 radishes
½-1 cup cubed Gouda cheese
Ranch dressing (see previous "tartar" sauce in this recipe)
½ cup pickles
~3 tbsp cream
~ 3 tbsp milk
2 tbsp butter
½ cup pickled beats or sauerkraut
1 carrot

Directions:
Preheat oven to 375F
Drizzle 1-2 tsp oil over sausage along with ¼ tsp salt and ¼ tsp pepper and roast in over on 375F until well browned, about 20 minutes
Bring a small to medium sized pot filled ¾ with water to a boil and toss in 2 tsp salt.
Peel and chop 2 potatoes into smallish chunks and toss into boiling water. Boil until fork/knife tender. Around 10-15 minutes depending on the size of your pieces.
Slice 2 green onions into thin slices along with 2 radishes and using a peeler, peel “ribbons” of the carrot.
Mix 1-3 tbsp milk in with the “tartar” sauce (if you are not using your own favorite dressing)
Once the potatoes are done, drain very well and place back in the pot. With the heat off, stir in 1 tbsp butter, ½ - 1 cup cheese, 2 tbsp milk, and 2-3 tbsp cream. Stir in ¼ - ½ tsp salt and pepper. Adjust from there to your desired consistency, using milk, and salt preference.
Serve family style or plate up everything for a hearty meal.
