Welcome To A New Week!

Hey everyone, this week's meals are as follows. We are going to make bacon feta and broccoli salad, beef short ribs with carrot purée, chicken noodle soup, easy vegan fish and chips, and a mushroom pasta. Below are the ingredients and a little write up about shopping and things to look out for!

Groceries

Fresh and Produce:

  • 8-12 oz of mushrooms (not already chopped)

  • 3 onions

  • 2 heads of garlic

  • 3 lemons

  • 8-10 carrots

  • 4-5 bay leaves

  • 1 bunch of parsley

  • 1 inch knob of ginger

  • 2 heads of broccoli

  • 5-6 green onions

  • 3-5 radishes

Aisle of Spices, Dried Good, Oils, etc:

  • 10 oz of pasta of your choice (for the mushroom pasta)

  • 1lb of egg noodles (for the chicken noodle soup)

  • ¼ tsp dried dill

  • 1 tbsp of pickled onions or capers

  • 2 tbsp brown sugar

  • ¼ cup soy sauce

  • ½ cup rice

  • 1 cup bulgur wheat

  • ½ cup chopped almonds

  • 1 tbsp Calabrian chilies

Freezer/Cold:

  • 1 small bag of frozen spinach

  • Parmigiana cheese

  • 6 - 8 vegan fish fillets

  • 1 small bag of fries

  • 1-3 tbsp milk (can be oat, almond, or whole)

  • 1 cup of sour cream (can be vegan)

  • 5-6 cups of chicken stock

  • 1-1 ½ cup frozen peas

  • 5-6 oz feta cheese

Protein:

  • 2 large chicken breasts or 1 medium whole chicken

  • 2 boneless beef short ribs

  • 6 slices of thick cut bacon

Staples (You should always have these):

  • Salt

  • Black pepper

  • Olive oil

  • Garlic powder

  • Onion powder

  • Red pepper flakes

Notes On Shopping

As always, these shopping items only cover what we will be using in the recipes. These recipes are also written for 2 large or 3 servings so you may need to pick up more items, but all the recipes are scalable.

For the boneless short ribs, you can substitute bone in short ribs, but the cooking time will need to be doubled. Most bone in short ribs are larger than the boneless version so you may also need to add an extra one.

Bulgur wheat can be hard to find sometimes and most stores carry it in the bulk section and not down the aisle with the rice. If you cannot find it, pearl couscous is a fine substitute.

For the mushrooms make sure to not get the pre sliced or canned mushrooms. Try to also pick up something that is not just button mushrooms to add more flavor, but getting only button mushrooms will be just fine and provide a nice meal.

For the stock, we recommend picking up the highest quality stock you can get. This is typically in the freezer section or something you have made fresh yourself. The box stuff will work, but in the recipe we cut the stock with some water for the rest of the liquid. If you pick up the box stock, get extra as watering down the box stuff will not taste anywhere near as good. It will work, but the soup will be rather bland.
